SUMMARY:

The use of wooden barrels is a well-established practice in winemaking, traditionally dominated by European oak. However, the growing demand for sustainable alternatives has driven interest in native Brazilian wood species. This project aims to evaluate the impact of native Brazilian woods — grápia (Apuleia leiocarpa), bálsamo (Myroxylon balsamum), and cabreúva (Myrocarpus frondosus) — on the chemical composition and aromatic profile of wines from the Trebbiano cultivar, a neutral-profile variety well suited for such studies. The research includes classical physicochemical analyses, spectrophotometric and chromatographic techniques (UPLC-MS and GC-MS), as well as sensory evaluations with a trained panel. The study seeks to characterize the transfer of phenolic and volatile compounds from the wood, as well as their impact on wine quality and sensory acceptance. Additionally, it aims to propose a technical protocol for the enological use of Brazilian woods, contributing to innovation, sustainability, and the valorization of national biodiversity in viticulture.
